Energy Bites

If you are like me, you are constantly trying to find some sort of healthy snack to fulfill that afternoon slump. These little nuggets are so perfect. They are sweet, yet satisfying. These are amaze-balls! Pun intended.
Even better, my 3 year old is obsessed! It is a fast and easy recipe that he can help with. I find that anytime our picky son can help us cook, he is more likely to eat it. Desmond didn’t do great at the ball shaping – haha – but certainly had fun trying.
Let’s jump right into it – the majority of these items will probably be in your pantry already and these whip up super quick. Even with toddler help, these only took us about 20 minutes to put together.
Ingredients you will need:
- 1 heaping cup of your favorite Peanut Butter
- 1/2 cup mini chocolate chips
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- 4 tablespoons honey
- 3 tablespoons ground flax seed
Instructions:
- Quickly pulse your oats. I used my Ninja for this and it literally took about 2 seconds. This will help with the texture of the balls. I am not a fan of biting into uncooked full oats. If that’s your thing, then just go ahead and skip this step
- Mix all your ingredients together. I just used a spoon and it worked fine, but you can certainly use a mixer if you prefer
- Round into balls and pop in your fridge for 30 minutes.
One other suggestion that I can’t wait to try is roll these little treasures in some coconut! Mmmmm….
